Hi Joan;
This looks like it may be your Charles and Jessie from the 1881 Census for Nova Scotia. They don't appear to have any children at the time:

Charles MCPHEE M Male Scottish 34 Nova Scotia Travel Agent C. Presbyterian
Jessie MCPHEE M Female Scottish 33 Prince Edward Island C. Presbyterian

I can't access the 1891 census from home but the 1901 census for the same area (Boularderie)has a Charles of the same age now married to a Margaret: McPhee Charles M Head M May 1 1846 54

McPhee Margaret F Wife M Dec 8 1856 44

McPhee Jessie F Daughter S Apr 7 1881 20

McPhee John M Son S Mar 7 1888 13

McPhee Samuel M Boarder S
